Where do the hazelnuts come from?
From the hazelnut groves we farm in Irpinia, in and around Avella, and from selected growers who work to our standards. The varieties are Mortarella, Camponica and Giffoni.
We work only Italian hazelnuts — never imported ones — in sizes 11/13 and 13/15 mm, never undersized and never split: that is why we never need to add flavourings. A whole, round hazelnut takes the heat evenly; a split one has its fibres exposed and oxidises sooner. We oversee the roasting ourselves, batch by batch, with a dedicated curve for each size.
On traceability: the blockchain traceability project for our production process has been started — it is what earned us Coldiretti’s Oscar Green award in 2022 — but the system is still under development.
What’s the difference between pure paste and spread?
- Pure paste: 100% roasted and ground hazelnuts, no sugar or other ingredients. It’s the pastry and gelato ingredient, but it works just as well at home — in yoghurt, in cakes, in home-made ice cream.
- Spread (45 line): hazelnuts at 45% with sugar and, depending on the recipe, milk or cocoa. It’s the finished product, ready to enjoy.
In short: pure paste is the ingredient, the spread is the finished product. The most common mistake is applying to pure paste the dosage of a sweetened paste: pure paste has no sugar, so the recipe has to be rebalanced.

What formats do you offer?
- Spreads: 250 g jar (Classic, Dark, White and Havana) and 1,25 kg jar (Classic, Dark, White).
- 100% Pure Paste: 170 g jar, plus 1 kg and 5 kg tubs in all three roasts — light, medium, dark.
- Roasted hazelnuts, chopped hazelnuts and flour: 200 g, 500 g and 1 kg bags.
- Gemme: 170 g jar.
- Tasting Kit: all 8 products in a single box.
The 1 kg and 5 kg pure paste tubs are bought on this site like everything else: no VAT number, no minimum order, even just for your own kitchen. For gelato shops and pastry kitchens there are also the 10 kg tub and the Frozen line in 6 kg tubs: the price list is available on request on the Professional page.
Which products are 100% hazelnut, with nothing added?
The Origini collection: 100% Pure Paste, Roasted Hazelnuts, Chopped Hazelnuts and hazelnut Flour. One ingredient — Irpinia hazelnuts — and nothing else: no sugar, no added oil, no flavourings, no preservatives.
Chopped hazelnuts come in two grades, 2-4 mm and 4-8 mm (the 200 g bag holds the 2-4 mm). The flour is very fine ground hazelnut, under 1 mm: use it like almond or pistachio flour, swapping one for one, and not as a replacement for wheat flour, since it has no gluten and gives no structure.
